Excellent for the price, same German steel as Wusthof knivesJul 11, 2011
By Maxwell It's sharp out of the box, but not literally "razor sharp" I guess I will try to sharpen it with a ceramic fine sharpener, to have the real "razor sharp"
X50CrMoV15 - German steel. Very stain resistant. Other than that not much to speak of. The cryptic X50CrMoV15 stands for 0.5% carbon, the other 15% is composed of 14% or 14.5% of Cr, some Mo and V. I don't know who in German marketing came up with the idea to use X for Carbon, in periodic table it's C. 0.5% C content means, by definition X50CrMoV15 isn't a high carbon steel, despite of some marketing claims. In fact it has less C content compared to 440C steel. However, it's plenty tough and resists corrosion well. If you don't want to bother maintaining your knives this is a good choice. Except for the low edge holding ability of course. In the end, you end up sharpening it a lot more often, so low maintenance statement is really arguable. Used by Wusthof, Victorinix and others in their high end knives. Ref - X50CrMoV15 Steel Composition.
HRC 55: Very hard steel (e.g. a higher quality knife blade): ( Hardened High Speed Carbon and Tool Steels such as M2, W2, O1, and D2, as well as many of the newer powder metallurgy Stainless Steels such as S30V, 154CM, CPM-M4, ZDP-189 , etc.
downside: made in China, but Hey, for the price and the German material, is not a big deal, as long as you sharpen it once received, for sharpening advise check [...]

Outstanding Bargain!May 06, 2010
By Jesse Rosenquist This knife is a complete pleasure to use. The santoku design works as advertised to keep food from sticking, but I mainly enjoy the quality and heft of this sturdy blade. Super sharp and nice handle. My next purchase will be the Surge Chef's Knife.

I have quite a few Kleve knives, including the 8" chef. I would say that this 7" Santoku is good for around $12, but not more. It's nicely made and cuts well, but isn't as easy to "rock" (when chopping) as the chef knife. I think this is not so with all santoku knives, just this one - the edge is not arched, but is flat and then curved. It's ok to chop vegetation, but it's not really stick-free, personally I don't see any difference from the dimple-free blades. Generally I prefer the Kleve chef knife, except that it has the full bolster. I think this knife's half-bolster is a better design.
The 5" santoku version is very weird- too small to chop, like a chef, but too large to pare... weird. Maybe an occasional garlic or shallot chop?
My perception of knives changed, after I tried some higher end knives, like Shun at that snobby store (sur-la-table). But I can't afford those.

By Judy I've been wanting to get a Santoku Knife for quite a while, but finally decided on this one. The price was great and when I received it I was very satisfied with it. I wish I had gotten it sooner!!! Now I am going to check out the rest of their line of knives.
